The Limousine breed is such a star that it lightly overshadows the other meat productions. However, some are renowned: the Cul-Noir pork, recognizable by its rear … black, as in it’s name, the Baronnet lamb from Limousin which benefits from a Protected Geographical Indication, quality poultry with muscular calves … but also, more surprisingly, the American bison meat from the Plains of Creuse. Our fish
It would be hard to imagine our territory without it’s fish, given the number of lakes, ponds, streams and rivers… Besides, all of these ponds, which seem to have been here forever, are articificial and have been developed, mostly by monks in the Middle Ages. This is where they kept trout and other freshwater fish. Their consumption is part our traditions. Some fish famrs still offer “portion” trout, to be eaten simply grilled on both sides, salted and peppered. Delicious !
