Our Limousine Meat
Cradle of the Limousine cattle breed, our territory has managed, by selection, to preserve this breed with incomparable meat within its green pastures! Red, tender and delicately marbled, Limousin beef is a testament to the gastronomic quality of an entire region. A spot of “fire” in a green field, the Limousine cow is an integral part of the local rural landscape and revitalizes the economy of the territory. The Limousine breed is such a star that it lightly overshadows the other meat productions. However, some are renowned: the Cul-Noir pork, recognizable by its rear … black, as in it’s name, the Baronnet lamb from Limousin which benefits from a Protected Geographical Indication, quality poultry with muscular calves … but also, more surprisingly, the American bison meat from the Plains of Creuse. You can find fresh, vacuum-packed, frozen or processed meat in terrines, ready meals, rillettes, pâtés …

Our fish

It would be hard to imagine our territory without it’s fish, given the number of lakes, ponds, streams and rivers… Besides, all of these ponds, which seem to have been here forever, are articificial and have been developed, mostly by monks in the Middle Ages. This is where they kept trout and other freshwater fish. Their consumption is part our traditions. Some fish famrs still offer “portion” trout, to be eaten simply grilled on both sides, salted and peppered. Delicious !

Aromatic or medicinal plants

Weeds occupy our paths, our meadows, our gardens … What are they called? Yarrow, plantain, hogweed, meadowsweet … We can admire their graceful growth, smell their sometimes heavy odor, but let the specialists take care of picking them, drying them and assembling them. They then offer them to us in the shape of herbal teas, balms, quality oils, ready to relieve our slightest sores and even … make us more beautiful!

Our vegetable gardens

Nothing like a soup or a dish of raw vegetables, served up directly from the garden. Nice and fresh, the vegetables are rinced under cold water, prepared, cooked and eaten as quickly as possible. Add nothing, or only a little to keep the vitamins, color and best flavours! Simplicity is really good.

Products from the hive

A bee foraging on a dandelion flower and that’s it … here we are in the countryside! However, there is an unsuspected range of honeys: chestnut, lime, fir, hazel, acacia, bramble, mountain … each honey has its color, texture and above all its taste! Our beekeepers know how to talk about it, advise us, show visitors around the honey house. Some even offer a range of honey-based products such as gingerbread, nougat, sweets, but also other lesser-known beehive products: pollen, royal jelly, propolis or wax.

The apples

The reputation of Limousin apple is well established! Besides, it’s the only apple of France to benefit of an AOC and AOP label. Wondering why ? Bite into a fruit and you discover its marked taste directly from the region. Local and old variety apples are here too! In a basket or crate, in the cellar or in the garage, you will have the pleasure of keeping them for a long time and enjoying them until the end of winter, at least… They will delightfully suit your traditional pies, brighten up a salad and they will perfectly enhance the farm sausages! Unless you find them in the form of juice, cider or liqueur but then … moderation is essential!
