Benoît Corjon, chef de cuisine Restaurant Le France – GB

AUBUSSON

Trained in L’ile de Ré in a gourmet restaurant for over a year, Benoît did a 6-month stint with Richard Coutanceau in La Rochelle (3 Michelin stars) before entering – as he puts it – “by the back door” into the kitchens of the famous Hôtel de Crillon, Place de la Concorde in Paris, run at the time by chef Dominique Bouchet.

After 9 months of training in the demanding Palace kitchen, Benoît took over as head of the Brasserie du Crillon brigade. When Jean-François Piège took over from Dominique Bouchet, the latter renewed his confidence in him and enabled him to progress technically by appointing him head chef of the brasserie, a position he held for 14 years.

The year 2017 marked Benoît Corjon’s arrival in Creuse, where he joined his friend Laurent Wolfelsperger Marsalon to develop the catering side of the business at Le Cabas creusois in Guéret. These five years were crowned by a nomination in the Michelin Green Guide and 3 awards of excellence.

Benoît Corjon takes over as head chef of the restaurant Le France in 2022.
